Palm Beach Strata Recipe
This is a wonderful brunch dish. It works well because you can make it ahead of time and just pop it in the oven!

Ingredients
  • 2 tsp butter
  • 10 thick slices egg bread, or Challah, cut in 1" cubes
  • 5 oz sliced smoked salmon
  • 8 ozs cream cheese, cut in 3/4" cubes
  • 1/4 cup finely diced red onion
  • 1/4 cup capers
  • 6 green onions, sliced thin
  • 10 eggs (yes, ten)
  • 3 cups half & half
  • about 20 chives, chopped fine
  • salt & pepper to taste

Directions
  1. 1.Lightly grease a 3 qt. casserole pan with butter. Add 1/3 of the bread cubes. Layer on 1/2 of smoked salmon, cream cheese, red onion, capers and green onions.
  2. Top with 1/3 of bread cubes, then remainder of salmon, cream cheese etc., end with a final top of the last third of the bread cubes.
  3. 2. Mixing bowl: whisk eggs and half & half together, add the chives and season with salt & pepper. Pour this over the casserole and gently press the bread down to ensure that all of it gets coated with this egg mixture.
  4. 3. At this point you can cover and refrigerate the strata for up to 24 hours. If you're ready to eat: bake it at 325 for 35-45 minutes, or until egg mixture is solid.
  5. I've had this hot, and I've had it cold. It's delicious both ways.
