How to make it

  • Mix all and place in 9 inch square pan.
  • Bake 350F about 35 to 30 minutes or until set.
  • Scoop out from the pan to serve as a side dish .

    Made this a while back. It's very good. I still keep coming back to make the same recipe. Tonight I decided to make my own cream corn to see how it blends with the recipe. Tastes good already.
    Cream Corn
    1 cup of corn (fresh preferably)
    1/2 cup of heavy cream
    1 tsp sugar ( more if you like)
    1/2 tsp salt
    mix in pan on medium heat for about 10 min. stir occasionally.
    Then on the side mix
    1TB butter(melted)
    1tsp flour
    to make a roux. Do not brown
    then add to corn mixture to make thick. You can add more if needed.
    This recipe can be doubled.
    add milk to make thinner if needed.

    I wanted to duplicate Chi- Chis corn cake package mix which is a side dish similar to a pudding cake and scooped out as a side dish/dessert. The mix had no eggs in it and so when I duplicated recipe I didn't include eggs either. It's very sweet and meant as an accompanient to Mexican meals. I don't see it as a dessert but more as a sweet side dish. I do hope you try it!

    Is this more like a pudding? When I read the recipe it makes me want to add an egg or something. I guess I'll just have to try it and see. THX for posting it for us. :)
