Prosciutto And Pesto Sandwich Recipe

Ingredients
  • Round Loaf of Farm Bread or other nice crusty bread UNCUT!
  • 1/4 lb very thinly cut prosciutto (I like Prosciutto de Parma)
  • 1/4 lb guyere cheese or other sharp Swiss cheese
  • 1/4 lb pesto
  • 2-4 ripe tomatoes depending on their size (or try sundried tomatoes)

Directions
  1. Cut the top off the loaf of bread and scrape out most of the loaf to make it hollow. The bits can be used to soak up any pesto that is left or to dip in olive oil for a good snack.
  2. Spread some of the pesto in the bottom of the bread hollow
  3. Layer in prosciutto, cheese and tomatoes followed by more pesto. Repeat until the loaf is full.
  4. Replace lid and press down slightly.
  5. Wrap the sandwich in foil or parchment and weigh down in the bottom of the picnic basket or just leave it as is.
  6. Cut into 4-6 wedges and serve. (The cutting can be done before travel and then just put it back together to transport it.)
  7. We like to take this when we travel - it makes a great lunch on the road, just stop at a park, or a rest area, and eat.

Sounds very good!


I typically get 3-4 layers (prosciutto, pesto, tomato, cheese) out of those ingredients. Depends on how thinly you slice the cheese and prosciutto.
