Ingredients
  • 2 c long-grained white rice
  • 2 c water
  • 2 qts whole or low-fat milk
  • 1 c sugar
  • 2 t vanilla
  • 1 t cinnamon

Directions
  1. Place rice in a bowl with enough hot water to cover it completely. Seal bowl with plastic wrap and let stand at room temp for 6 to 8 hours or overnight.
  2. The next day, strain rice through a colander, discarding water.
  3. Place 1 c water and 2 c milk in blender with one cup of rice. Blend until liquified. Pour into pitcher. Repeat with the other half of milk, water and rice.
  4. Pour through a strainer to remove extra rice pulp. Mix in sugar, vanilla and cinnamon and stir until sugar is completely dissolved. Chill throughly before serving. Pour into tall, ice-filled glasses, sprinkle lightly with additional cinnamon and serve.

I've heard of this and never knew where to try it around here. Thanks, Juliecake...I'm going to try this when the grandkids are here with a Mexican fiesta!


Made this again yesterday, turned out marvelous. Be sure to strain it well and don't squeeze rice pulp against side of strainer. j
