Boston Corn Cake Recipe
Slightly sweeter version of an old southern standby, makes great muffins too!

Ingredients
  • 1/2 C Cornmeal
  • 1 C flour
  • 1 C milk
  • 1/2 C Sugar
  • 1/2 Teas Salt
  • 1 Tbl Melted Butter
  • 1 Medium Egg, lightly beaten
  • 2 Teas Baking Powder

Directions
  1. Combine dry ingredients and sift into medium bowl. Blend in Egg and milk. Melt butter in a 8" iron skillet. Remove from heat. Immediately stir in cornmeal mixture. Bake at 425 degrees for about 30 minutes. You may add melted butter to mixture and bake in an 8" baking pan if your kitchen is lacking ironware.
