How to make it

  • Cook pasta according to manufacturers directions. Time cooking of your pasta so it will be ready when the sauce is.
  • Saute onions, garlic and zucchini in a small amount of olive oil over high heat.
  • Once zucchini is soft and garlic has begun to brown add the wine and cream. Simmer until slightly thickened about 1 minute. Add the goats cheese and pine nuts. Season with salt and pepper.
  • Toss in the pasta and basil leaves and serve with parmesan.
