Ingredients
  • 500gr dried penne pasta
  • 1 brown onion, finely diced
  • 3 cloves garlic, minced
  • 4 medium zucchini, coarsely grated
  • 100ml white wine
  • 150ml cream (35% or half and half)
  • 120gr goats cheese
  • 2Tbsp pine nuts
  • 1/2 bunch basil leaves

Directions
  1. Cook pasta according to manufacturers directions. Time cooking of your pasta so it will be ready when the sauce is.
  2. Saute onions, garlic and zucchini in a small amount of olive oil over high heat.
  3. Once zucchini is soft and garlic has begun to brown add the wine and cream. Simmer until slightly thickened about 1 minute. Add the goats cheese and pine nuts. Season with salt and pepper.
  4. Toss in the pasta and basil leaves and serve with parmesan.
