Penne with Zucchini Goats Cheese and Pine Nuts

- 500gr dried penne pasta shopping list
- 1 brown onion, finely diced shopping list
- 3 cloves garlic, minced shopping list
- 4 medium zucchini, coarsely grated shopping list
- 100ml white wine shopping list
- 150ml cream (35% or half and half) shopping list
- 120gr goats cheese shopping list
- 2Tbsp pine nuts shopping list
- 1/2 bunch basil leaves shopping list
How to make it
- Cook pasta according to manufacturers directions. Time cooking of your pasta so it will be ready when the sauce is.
- Saute onions, garlic and zucchini in a small amount of olive oil over high heat.
- Once zucchini is soft and garlic has begun to brown add the wine and cream. Simmer until slightly thickened about 1 minute. Add the goats cheese and pine nuts. Season with salt and pepper.
- Toss in the pasta and basil leaves and serve with parmesan.
