Authentic Thai Green Curry

- For the curry paste... shopping list
- 4-6 Long Green Chillies shopping list
- 2 tbsp. Chopped shallots shopping list
- 2 tsp. Chopped galangal shopping list
- 1 tsp. Kaffir lime rind (other varieties will suffice) shopping list
- 2 tsp. Chopped garlic shopping list
- 2 tbsp. Chopped ginger shopping list
- 2 tbsp. Chopped lemongrass shopping list
- 1/2 tsp. cumin seeds shopping list
- 1/2 tsp. coriander seeds shopping list
- 1/2 tsp salt shopping list
- Other Ingredients... shopping list
- 2 cup Sliced vegetables (eggplant, potato, broccoli ect.) shopping list
- 3/4 cup sliced onion shopping list
- 150 grams Thinly Sliced chicken shopping list
- 2 tsp sugar shopping list
- 2 tbsp. fish sauce shopping list
- 6 kaffir lime leaves shopping list
- 4 Stems of sweet basil shopping list
- 2 Cups of coconut milk shopping list
- 1 Cup of water shopping list
- NB: chicken can be replaced with meat, fish or tofu shopping list
How to make it
- Put Curry Paste ingredients in mortar. Pound with pestle until everything is mixed and ground thoroughly. Make sure there are no seeds left uncrushed. (Alternatively you can use a blender or food processor)
- Pour coconut milk into saucepan and turn on medium heat. Stir until oil appears on the top.
- Add green curry paste and chicken and stir until almost done.
- Add vegetables, fish sauce, water, sugar and turn heat up and stir a little.
- When everything is cooked, put in sweet basil and kaffir lime leaves.
- Serve with Jasmine Rice or Sticky Rice.
