Authentic Thai Green Curry Recipe
I picked up this recipe whilst in Chang Mai. You've got to love that northern Thai taste!

Ingredients
  • For the Curry Paste...
  • 4-6 Long Green Chillies
  • 2 tbsp. Chopped Shallots
  • 2 tsp. Chopped Galangal
  • 1 tsp. Kaffir Lime Rind (other varieties will suffice)
  • 2 tsp. Chopped Garlic
  • 2 tbsp. Chopped Ginger
  • 2 tbsp. Chopped Lemongrass
  • 1/2 tsp. Cumin Seeds
  • 1/2 tsp. Coriander Seeds
  • 1/2 tsp Salt
  • Other Ingredients...
  • 2 cup Sliced Vegetables (eggplant, potato, broccoli ect.)
  • 3/4 cup sliced Onion
  • 150 grams Thinly Sliced Chicken
  • 2 tsp Sugar
  • 2 tbsp. Fish Sauce
  • 6 Kaffir Lime Leaves
  • 4 Stems of Sweet Basil
  • 2 Cups of Coconut Milk
  • 1 Cup of Water
  • NB: Chicken can be replaced with meat, fish or tofu

Directions
  1. Put Curry Paste ingredients in mortar. Pound with pestle until everything is mixed and ground thoroughly. Make sure there are no seeds left uncrushed. (Alternatively you can use a blender or food processor)
  2. Pour coconut milk into saucepan and turn on medium heat. Stir until oil appears on the top.
  3. Add green curry paste and chicken and stir until almost done.
  4. Add vegetables, fish sauce, water, sugar and turn heat up and stir a little.
  5. When everything is cooked, put in sweet basil and kaffir lime leaves.
  6. Serve with Jasmine Rice or Sticky Rice.
