Toronto Pie

A delicate hot-milk sponge cake split and filled with raspberry jam.This was published in a cookbook published in Toronto,hence the name. It is from Recipezaar
Ingredients
- 1/2c milk,scalded,heated till bubbles appear around edges. shopping list
- 2Tbs. butter shopping list
- 1c cake flour or pastry flour shopping list
- 11/4tsp baking powder shopping list
- 1/4tsp salt shopping list
- 2 eggs shopping list
- 2/3c granulated sugar shopping list
- 1/4tsp vanilla shopping list
- raspberry jam shopping list
- icing sugar shopping list
How to make it
- Preheat oven to 350
- Grease 9" round layer cake pan and line with wax paper
- Combine scalded milk and butter
- Sift or blend together flour,baking powder and salt.
- Beat 2 eggs until very light and fluffy.
- Gradually beat in granulated sugar
- With mixer at high speed ,beat eggs and sugar for 1 minute.
- Fold in dry ingredients,then stir in hot milk mixture.
- Turn into prepared pan
- Bake in preheated 350 oven for 30 to 35 minutes or until cake springs back when lightly touched.
- Cool in pan
- When almost cool,loosen edges from pan
- Split into 2 layers. Sandwich together with raspberry jam
- Sprinkle with icing sugar on top.
