Crockpot Jambalya Recipe
A nice dish to throw together in the morning, n have ready when you get home.

Ingredients
  • 1 large onion chopped
  • 1 green pepper seeded n chopped
  • 2 meduim celery stalks chopped
  • 28 oz can diced tomatoes undrained
  • 2 cups smoked sausage
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon red pepper sauce
  • 3/4 lb uncooked shrimp
  • 4 cups cooked rice

Directions
  1. Mix all in crockpot, except rice n shrimp.
  2. Cook on low for 7-8 hours, Stir in shrimp n cook another hour or until shrimp are pink n firm. Serve with cooked rice.

Excellent - I got to get me a crockpot but quick - there are so many fantastic recipes here that take advantage of the crockpot!

I made this jambalaya tonight, and it turned out really well! It was so fast to throw together this mornings, and the smell was so delicious when I got home from work. I ended up using much less rice than 4 cups though - more like 2 cups. And did you mean 1/4 cup of pepper? I used more like a 1/4 tsp. Otherwise, it was great!
