Ingredients
  • 2 cups of rice (I use brown rice)
  • 1 litre of chicken stock
  • 2 tablespoons of honey
  • 1 tablespoon of maple syryp
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oregano
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp salt
  • 4 fillets of chicken
  • 4 pieces of bacon

Directions
  1. Preaheat oven to 150 C / 300 F
  2. Put the rice in the bottom of the casserole dish
  3. Mix the stock with the honey, maple syryp, soy sauce, oregano, nutmeg, cinnamon and salt.
  4. Wrap each fillet of chicken with a slice of bacon.
  5. Place on top of rice.
  6. Pour the stock mixture over the top.
  7. Cover tightly with tin foil or a tight fitting lid.
  8. Bake for approx 2 hrs.
