Creamy Squash Casserole Recipe
I got this recipe from a friend years ago and It's one of my favorites

Ingredients
  • 2 lbs (6 cups) Yellow Squash
  • ¼ cup chopped onion
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded carrots
  • 1 8 oz pkg herb seasoned stuffing mix
  • ½ cup butter, melted

Directions
  1. In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes then drain.
  2. Combine soup and sour cream.
  3. Stir in shredded carrots.
  4. Fold in drained squash and onion.
  5. Combine stuffing mix and butter.
  6. Spread ½ stuffing mix in bottom of a 12 x 7 ½ x 2 inch baking dish.
  7. Spoon vegetable mixture on top.
  8. Sprinkle remaining stuffing mix over vegetables.
  9. Bake at 350 degrees for 25-30 minutes.
  10. Serves 6.

Wonderful recipe! You can't beat a good squash casserole. It is always a hit. I haven't tried it this way but I will.


Havent made it this way but I'm sure its good -Got Squash in it. Ha.
