Creamy Squash Casserole

- 2 lbs (6 cups) yellow squash shopping list
- ¼ cup chopped onion shopping list
- 1 can cream of chicken soup shopping list
- 1 cup sour cream shopping list
- 1 cup shredded carrots shopping list
- 1 8 oz pkg herb seasoned stuffing mix shopping list
- ½ cup butter, melted shopping list
How to make it
- In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes then drain.
- Combine soup and sour cream.
- Stir in shredded carrots.
- Fold in drained squash and onion.
- Combine stuffing mix and butter.
- Spread ½ stuffing mix in bottom of a 12 x 7 ½ x 2 inch baking dish.
- Spoon vegetable mixture on top.
- Sprinkle remaining stuffing mix over vegetables.
- Bake at 350 degrees for 25-30 minutes.
- Serves 6.

Wonderful recipe! You can't beat a good squash casserole. It is always a hit. I haven't tried it this way but I will.
