How to make it

  • In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes then drain.
  • Combine soup and sour cream.
  • Stir in shredded carrots.
  • Fold in drained squash and onion.
  • Combine stuffing mix and butter.
  • Spread ½ stuffing mix in bottom of a 12 x 7 ½ x 2 inch baking dish.
  • Spoon vegetable mixture on top.
  • Sprinkle remaining stuffing mix over vegetables.
  • Bake at 350 degrees for 25-30 minutes.
  • Serves 6.

    Wonderful recipe! You can't beat a good squash casserole. It is always a hit. I haven't tried it this way but I will.
