Creamy Squash Casserole Recipe

Ingredients

2 lbs (6 cups) Yellow Squash

¼ cup chopped onion

1 can cream of chicken soup

1 cup sour cream

1 cup shredded carrots

1 8 oz pkg herb seasoned stuffing mix

½ cup butter, melted

Directions

In saucepan, cook sliced squash and chopped onion in boiling salted water for 5 minutes then drain.

Combine soup and sour cream.

Stir in shredded carrots.

Fold in drained squash and onion.

Combine stuffing mix and butter.

Spread ½ stuffing mix in bottom of a 12 x 7 ½ x 2 inch baking dish.

Spoon vegetable mixture on top.

Sprinkle remaining stuffing mix over vegetables.

Bake at 350 degrees for 25-30 minutes.

Serves 6.
