British Style Scones Recipe
My stand by for simple but delicious scones which may be varied in many ways. These freeze well.

Ingredients
  • 3 1/2 cups flour
  • 2 Tbs. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup butter or margarine ,cold
  • 3/4 cup sugar
  • 1 cup currants ( or dried blueberries, dried cranberries etc. )
  • 1/2 cup buttermilk
  • 1 tap vanilla or almond ( optional )
  • 2 eggs
  • Cream for brushing

Directions
  1. Sift flour, baking powder and soda into a bowl.
  2. Stir in the sugar.
  3. Cut butter into mixture to resemble fine meal consistency.
  4. Stir in the currants.
  5. Combine eggs and buutermilk and stir with a fork into meal mixture to form a soft dough.
  6. Shape dough into a ball with lightly floured hands.
  7. Roll or pat out lightly onto a floured surface, 1 inch thick.
  8. Brush dough with cream.
  9. Sprinkle with sugar. Sanding or coarse sugar is nice.
  10. Score into 8 wedges.
  11. Bake in a 400F 30 to 40 minutes or until puffed and golden.
  12. When warm, cut through scores with sharp knife.
  13. Serve with butter, jam, etc.
  14. Freezes well
