British Style Scones

- 3 1/2 cups flour shopping list
- 2 Tbs. baking powder shopping list
- 1/2 tsp. baking soda shopping list
- 1/2 cup butter or margarine ,cold shopping list
- 3/4 cup sugar shopping list
- 1 cup currants ( or dried blueberries, dried cranberries etc. ) shopping list
- 1/2 cup buttermilk shopping list
- 1 tap vanilla or almond ( optional ) shopping list
- 2 eggs shopping list
- Cream for brushing shopping list
How to make it
- Sift flour, baking powder and soda into a bowl.
- Stir in the sugar.
- Cut butter into mixture to resemble fine meal consistency.
- Stir in the currants.
- Combine eggs and buutermilk and stir with a fork into meal mixture to form a soft dough.
- Shape dough into a ball with lightly floured hands.
- Roll or pat out lightly onto a floured surface, 1 inch thick.
- Brush dough with cream.
- Sprinkle with sugar. Sanding or coarse sugar is nice.
- Score into 8 wedges.
- Bake in a 400F 30 to 40 minutes or until puffed and golden.
- When warm, cut through scores with sharp knife.
- Serve with butter, jam, etc.
- Freezes well
