How to make it

  • Sift flour, baking powder and soda into a bowl.
  • Stir in the sugar.
  • Cut butter into mixture to resemble fine meal consistency.
  • Stir in the currants.
  • Combine eggs and buutermilk and stir with a fork into meal mixture to form a soft dough.
  • Shape dough into a ball with lightly floured hands.
  • Roll or pat out lightly onto a floured surface, 1 inch thick.
  • Brush dough with cream.
  • Sprinkle with sugar. Sanding or coarse sugar is nice.
  • Score into 8 wedges.
  • Bake in a 400F 30 to 40 minutes or until puffed and golden.
  • When warm, cut through scores with sharp knife.
  • Serve with butter, jam, etc.
  • Freezes well
