New England Boiled Dinner Recipe
This is from a 100 yrs old recipe that has been passed around the family for years.Takes a long time to make but well worth it.Most of the boiled dinners you see now are a soup, but this recipe is how they ate it long ago.

Ingredients
  • 4 - 5 lbs. corned beef brisket
  • 1/2 bay leaf
  • 5 peppercorns
  • basil to taste
  • thyme to taste
  • parsley to taste
  • 6 white or yellow turnips,peeled and sliced
  • 8 carrots
  • 4 parsnips,peeled
  • 10 sm. onions,peeled
  • 8 med. potatoes,peeled
  • 1 green cabbage,cored,and cut into wedges

Directions
  1. Place beef in deep kettle; cover with cold water.
  2. Add herbs,but no salt.
  3. Bring water to a boil,skimming off fat.
  4. Cover and simmer for 3-4 hrs.
  5. Add all vegetables,but for the cabbage;
  6. cook for about 20 min.
  7. Add cabbage;cook for about 25 min. longer or
  8. until all the vegetables are tender.
  9. Place the beef on a hot platter; surround with vegetables.
