Warm Pasta Salad Recipe

Ingredients

1-2 lbs. chicken breasts

1 stick butter

3 cups broccoli florets

2 cups baby carrots

2 cups cauliflower

1/2 cup chopped onion

1/2 cup chopped green scallions

1 lb. pasta, penne preferred or corkscrew

1/2 cup milk

1 cup grated parmesan/romano cheese

Fresh or dried herbs- 1 tablespoon each-parsley,basil, oregano,garlic/pepper-more if desired to taste

salt and pepper to taste

Directions

Saute chicken breasts and onions (both) in 2 tablespoons butter.When cooked and cooled,cut into cubes and set aside

Steam broccoli, carrots and cauliflower until crisp tender,drain and set aside

Boil pasta ala dente.Drain and set aside.

In a large pan,melt rest of butter stick with milk. Add pasta, cubed chicken breasts,all vegetables and herbs . Stir well but gently.Add salt and pepper then add the parmesan/romano cheese and gently stir again. Sprinkle with parsley to garnish.
