Fruited Charosis Recipe
This dish is typically used for Passover but can be prepared any time of the year. It makes a nice condiment to accompany poultry, beef and lamb etc. I always get requests for this recipe when I prepare it with a variety of fruits.

Ingredients
  • 1 1/2 lbs (half of 3 lb bag) sweet crisp apples, peeled
  • juice from a fresh lemon
  • 1 cup walnuts
  • 1 cup honey or to taste
  • cinnamon to taste
  • dash salt
  • dash nutmeg
  • small amount sweet red wine to taste
  • Additions: Use some or all in desired amounts
  • 1/2 jar chopped, drained maraschino cherries
  • 1/2 cup Each dark and gold raisins
  • chopped pitted dates
  • chopped softened dried fruits such as apricots, papaya, cherries etc.
  • chopped softened candied pineapple
  • 1 naval orange, peeled ,segmented and chopped

Directions
  1. In food processor ( or by hand ) separately chop ( fine chop but not pureed ! ) the nuts, apples, and desired fruits.
  2. In a large bowl combine the apples, nuts, lemon juice ( and additional fruits in amounts you like ( I use about several Tbs. of different kinds I like ).
  3. Moisten with a few Tbs wine, sweeten with honey and cinnamon to taste.
  4. Cover and chill the mixture several hours to blend flavors.
  5. Stir before using. This make a large bowl ( 2 qt casserole ) and the
  6. recipe may be decreased as desired.
