Strawberry Rhubarb Conserve Recipe

A delicious combination of strawberry and rhubarb made special with the addition of walnuts and golden raisins. A wonderful breakfast spread.

Ingredients
  • 2 c sugar
  • 1/2 c water
  • 1 lb rhubarb, cut into 1 inch pieces (4c)
  • 1 pt strawberries, cut in half (2c)
  • 1/2 c coarsley chopped walnuts
  • 1/4 c golden raisins

Directions
  1. Heat sugar and water to boiling in 3 qt saucepan, stirring constantly. Stir in rhubarb. Boil gently about 15 minutes, stirring often until thickened. Stir in strawberries, walnuts and raisins. Heat to boiling; boil gently 5 minutes. Quickly skim off foam.
  2. Immediately pour into hot sterilized jars, leaving 1/4" headspace. Wipe rims of jars; seal. Cool on rack 1 hour. Store in refrigerator up to 2 months.
  3. Makes 4 half-pint jars
