How to make it

  • Drain juice from cherries, adding enough water if needed to make 1 cup.
  • Place cherry juice and chicken broth in sauepan with rice and dash of nutmeg and cloves.
  • Bring to a boil.
  • When boiling reduce heat to simmer and cover and cook rice till tender and all liquid is absorbed.
  • Depending on the variety of long grain rice you use, you may have to add more water.
  • When rice is tender and cooked, stir in drained reserved cherries and raisins.
  • The raisins add a bit of sweetness. Its pretty and purple and tastes great!
  • You should have about 1 cup drained cherries from the can for the recipe

    I have made this recipe many times, and I've never found someone who didn't like it. Also it's an impressive side dish if you want to create some buzz at a potluck!
    I usually substitute chicken stock for the chicken broth, then I don't need to add salt. Also, there's usually not enough cherry juice, so I supplement it with grape juice. I may have added a bit of brown sugar (to taste) when the raisins weren't doing the sweetening job.
    NOTE: If your raisins get swollen and soggy when you are using the leftovers, just pick them out and toss in some new ones. Stir & re-heat in the microwave = problem solved.

    original recipe used dried cherries, I used canned to use the cherry liquid!
