MARGARITA FAJITAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kerr Estate in Wills Point, Texas in 1982. Another tried and true keeper. Yummy.

Ingredients
  • 2 pounds beef skirt steak
  • Juice of 3 small limes
  • 3 large garlic cloves
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons tequila
  • 2 large poblano peppers seeded and halved
  • 2 medium white onions cut into wedges
  • 12 flour tortillas

Directions
  1. Combine lime juice, garlic, Worcestershire sauce and tequila.
  2. Add sliced peppers, onion and skirt steak then marinate in refrigerator overnight.
  3. Wrap tortillas in foil and place on outer edge of grill to warm turning once.
  4. Place marinated steaks, peppers and onions on grill 5" over medium hot coals.
  5. Cook 12 minutes uncovered then remove steak from grill and allow to rest 5 minutes.
  6. Slice at an angle across grain into 1/4" thick strips.
  7. Cut poblano peppers into strips then arrange carved steak, peppers and onion on a platter.
  8. Serve with warm tortillas.
