How to make it

  • Core peppers and cut into thin rings.
  • Fry in oil and salt for 1 minute.
  • Add 2 tablespoons water then bring to boil and cover then simmer 2 minutes and drain.
  • Chop ginger finely and fry scallops and ginger in oil 1 minute then add sugar and sherry.
  • Mix cornstarch to a smooth paste with soy sauce and add to pan.
  • Heat gently stirring until slightly thickened then add peppers and cook 1 minute.
