Scallops With Peppers

- 1 pound scallops shopping list
- 3 red peppers shopping list
- 1 tablespoon oil shopping list
- 1 teaspoon salt shopping list
- 1 ounce fresh ginger shopping list
- 2 tablespoons oil shopping list
- 1/4 teaspoon brown sugar shopping list
- 2 teaspoons sherry shopping list
- 1 teaspoon cornstarch shopping list
- 2 teaspoons soy sauce shopping list
How to make it
- Core peppers and cut into thin rings.
- Fry in oil and salt for 1 minute.
- Add 2 tablespoons water then bring to boil and cover then simmer 2 minutes and drain.
- Chop ginger finely and fry scallops and ginger in oil 1 minute then add sugar and sherry.
- Mix cornstarch to a smooth paste with soy sauce and add to pan.
- Heat gently stirring until slightly thickened then add peppers and cook 1 minute.
