SCALLOPS WITH PEPPERS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Ali Estate in Dallas, Texas in 1991.

Ingredients
  • 1 pound scallops
  • 3 red peppers
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 ounce fresh ginger
  • 2 tablespoons oil
  • 1/4 teaspoon brown sugar
  • 2 teaspoons sherry
  • 1 teaspoon cornstarch
  • 2 teaspoons soy sauce

Directions
  1. Core peppers and cut into thin rings.
  2. Fry in oil and salt for 1 minute.
  3. Add 2 tablespoons water then bring to boil and cover then simmer 2 minutes and drain.
  4. Chop ginger finely and fry scallops and ginger in oil 1 minute then add sugar and sherry.
  5. Mix cornstarch to a smooth paste with soy sauce and add to pan.
  6. Heat gently stirring until slightly thickened then add peppers and cook 1 minute.
