Lemon-Basil Turkey Breast Recipe
This one I got from a friend, years ago. I love eveything about it and it has a great flavor!

Ingredients
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 Tblesp. grated lemon peel
  • 1 boneless turkey breast ( about 1 to 2 lbs.)
  • 2 large lemons,sliced
  • 1 1/2 cup carrots, thinly sliced
  • 1 medium yellow onion, chopped ( about 1 cup)
  • 3/4 cup celery, thinly sliced
  • 1 cup reduced sodium chicken broth
  • 1 cup water

Directions
  1. Preheat oven at 325F.
  2. In a small bowl, combine basil, garlic and lemon peel.Mix well.
  3. Starting from short edge, gently loosen skin of turkey breast with fingertips, taking care not to tear the skin.
  4. Spread basil mixture under skin.
  5. Arrange lemon slices on top of basil mixture.
  6. In a large roasting pan,combine vegetables, broth and water.. Set a roasting rack over vegetables.
  7. Place turkey on rack, roast until an instant-read meat thermometer inserted into thickest part of breast registers 170 degrees, or cook about 1 hour.
  8. Baste frequently with pan juices..
  9. Place turkey on carving board.
  10. Let stand 20 minutes.
  11. Carve and remove skin to serve.
