How to make it

  • Oven 350F
  • Place coconut and chopped macadamia's on baking sheet. Bake until lightly toasted, stirring often, about 12 mins. Cool.
  • Line 2 large cookie sheets with parchment paper, grease parchment.
  • Combine condensed milk and vanilla in a large bowl. Mix in coconut and nuts thoroughly.
  • Using an electric mixer beat egg whites and salt until stiff but not dry.
  • Fold egg whites into coconut mixture.
  • Drop by rounded tablespoon onto prepared cookie sheets.
  • Bake until macaroons just turn golden brown around the edges, about 14 mins. Cool completely on cookie sheets.
  • Line another cookie sheet with wax paper. Dip cookie bottoms in melted chocolate.
  • Place cookies chocolate side down on prepared sheet. Chill until chocolate is set.
