White Tomato Foam

- 400 g tomatoes shopping list
- 2-3 basil leaves shopping list
- 1 twig thyme shopping list
- 1 teaspoon sugar shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon elder vinegar or white wine vinegar shopping list
- 2 gelatine leaves shopping list
- 100 ml heavy cream shopping list
How to make it
- Chop tomatos and mash.
- Add herbs, sugar, salt and bring to boil.
- Put a kitchen cloth in a sieve and let the white tomato juice drip.
- Warm it, add gelatine and vinegar.
- Beat over icy water until frothy.
- Stir in beaten heavy cream.
- Leave for 1 hour in the fridge.
