How to make it

  • Pastry:
  • Mix dry ingredients in a bowl.
  • Add butter, cutting in with a pastry blender or two knives until the mixture resembles cornmeal.
  • Mix egg yolk with water and add to the mixture.
  • Mix until dough sticks together in small clumps.
  • Shape dough into a ball and wrap in cling film.
  • Chill for 30 minutes.
  • After chilling, roll out the pastry on a lightly floured work top..
  • Line a pie pan with the rolled out dough.
  • Trim and flute the edges
  • Put the pan in the refrigerator to chill while making the filling.
  • Filling:
  • Melt the butter in a sauce pan.
  • Add the chocolate, cocoa powder and coffee, stirring until the chocolate has melted.
  • In a separate bowl beat eggs and sugar until creamy and blended. Add the sour cream, corn syrup and vanilla.
  • Stir in the chocolate and butter mixture.
  • Pour into the pastry shell and bake for 35 to 40 min until filling has puffed up and formed a crust.
  • When done remove from oven and put on a rack to cool.
  • Filling will drop and may crack a little as it cools down.
