How to make it

  • In large nonstick skillet or paella pan heat oil over medium heat.
  • Cook onion, garlic, rice and turmeric for 4 minutes.
  • Stir in stock, salt and pepper then bring to boil.
  • Reduce heat then cover and simmer for 10 minutes.
  • Cut green and red peppers in half lengthwise then remove core and membranes.
  • Cut in half crosswise then cut lengthwise into strips.
  • Core and chop tomatoes then stir peppers and tomatoes into pan and cook covered 15 minutes.
  • Stir in corn then cook covered for 5 minutes then garnish with parsley and serve.
