croquetas Croquettes

- 4 tbsp. butter/margarine 1/2 tsp. salt shopping list
- 1 tsp. onion (chopped) 1/8 tsp. pepper shopping list
- 1 cup milk 1 tsp. ac'cent shopping list
- 3/4 cup flour (gold medal) 1 tbsp. wine wine shopping list
- -------------------- -------------------------- shopping list
- 2 eggs 1 cup (as needed) cracker meal shopping list
- 2 cans tuna (olive oil, vegetable oil or water) drained should be about 3 cups of fish shopping list
How to make it
- Blend flour, salt & pepper. Heat butter and cook onions in low heat. Add blended items.
- Cook low heat, stirring constantly until it gets thick and you can see the bottom of the pan.
- Turn heat off. Add wine, ac'cent, & fish, (dash of nutmeg optional) Mix together. Turn over onto large plate and put in fridge for a couple of hours.
- Take dough and form into croquettes, whisk eggs until mixed well, place each croqette into egg then into cracker meal (twice) so it gets good covering.
- Let sit for awhile at room temp. until cooled. Fry until golden brown. (they cook fast, so use low heat or they can burn)
- sprinkle with lemon if you like.
