Lemon Sandwiches

This is a great party food and it has a great flavor.
Ingredients
- 2 eggs, beaten shopping list
- 3/4 cup sugar shopping list
- 4 Tblesp. butter shopping list
- 3 lemons ( juice and grated rind) shopping list
- 2 cups mayonnaise shopping list
- 1 cup nuts, chopped fine shopping list
How to make it
- In top of double boiler, combine eggs, sugar,lemon juice and rind and butter.
- Cook, stirring until thick ( like mayonnaise).
- Remove from heat and cool.
- Add mayonnaise and nuts.
- Spread thinly on bread.
- Cut sandwiches into 4 triangles for a delightful party sandwich.
