Savory Sausage Vegetable Stew

This is one of the most lip-smacking stews I have ever encountered, filling and warming. From the Land O Lakes Treasury of Country Recipes.
Ingredients
- 2 cups carrots, cut into 2" pieces and sliced lengthwise shopping list
- 1 cup chopped onion shopping list
- 1 cup celery, cut into 2" pieces and slicedc lengthwise shopping list
- 1 lb smoked sausage, cut into 2" pieces shopping list
- 3-1/2 cups shredded cabbage shopping list
- 1/2 cup chopped fresh parsley shopping list
- 1 cup apple juice shopping list
- 15oz tomato sauce shopping list
- 10oz can diced tomatoes with liquid shopping list
- 10oz can tomato soup shopping list
- 1 bay leaf shopping list
- 1/4 tsp each salt and pepper shopping list
- 1/2 tsp dried thyme leaves shopping list
How to make it
- In 2qt saucepan, cook first 4 ingredients over medium heat, stirring occasionally, until sausage is browned, about 10 minutes. Drain.
- Meanwhile, in 3qt saucepan, combine remaining ingredients. Cook over low heat, stirring ocasionally, about 15 minutes.
- Stir in first mixture and continue to cook, stirring occasionally, about 25 minutes.
