Ingredients
  • 4 Tablespoons of olive oil
  • 4 skinless, boneless chicken breasts
  • 1 onion chopped
  • 1 1/4 cup chicken broth
  • 1 ( 4 oz) can diced green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cilantro
  • 1/8 teaspoon cayanne pepper
  • 1 ( 15 oz cn) cannellini beans(drainned, rinsed)
  • 2 green onions, chopped
  • 2 ounces Monterey Jack cheese

Directions
  1. 1. Heat oil ( medium heat) cook chicken and onion for 4-5 minutes
  2. 2. Stir in chicken broth, chilies, garlic powder, cumin, oregano, cilantro and cayanne pepper. Reduced heat simmer for 15-20 minutes.
  3. 3. Sir in the beans and simmer for 5 minutes
  4. Garnish with green onions & shredded cheese
