Marvelous Morning Muffins

- 1 1/2 cups all purpose flour shopping list
- 1 cup oats (quick or old fashioned) uncooked shopping list
- 1/2 cup firmly packed brown sugar shopping list
- 1 to 2 Tablespoons flaxseed shopping list
- 1 Tablespoon baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/2 teaspoon salt (optional) shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/3 cup raisins shopping list
- 8 oz. can crushed pineapple in juice (undrained) shopping list
- 1/2 cup shredded carrots shopping list
- 1/2 cup skim milk shopping list
- 1/3 cup vegetable oil shopping list
- 2 egg white or 1 egg, lightly beaten shopping list
- Glaze: (optional) shopping list
- 1/3 cup powdered sugar shopping list
- 3 to 4 teaspoons milk or half & half shopping list
How to make it
- Heat oven to 400 degrees. Line 12 medium muffin cups with paper liners or lightly grease muffin cups or use silicon muffin cups without greasing. Combine dry ingredients and raisins; mix well. Add pineapple, including juice, carrots, milk, oil and egg; mix until just moistened. Fill muffin cups almost full. Bake 20 to 22 minutes or until golden brown. Let muffins stand a few minutes; remove from pan. Cool 10 minutes. For glaze, combined powdered sugar and milk; mix until smooth and drizzle evenly over muffins.
