Pork Chops and Spanish Rice

- 4 pork chops (doesn’t matter what kind – bone in or out, thin or thick cut) shopping list
- 1 tsp. rosemary shopping list
- ½ tsp. black pepper shopping list
- ½ tsp. salt shopping list
- 1 bay leaf shopping list
- chili powder (to taste) shopping list
- 1 medium onion, chopped shopping list
- 1 can stewed tomatoes shopping list
- 1 can or ½ jar salsa (mild, medium or hot - your preference!) shopping list
- 2 c. water shopping list
- 1 c. rice shopping list
- 1 green pepper, diced shopping list
How to make it
- Cover both sides of pork chops with rosemary, black pepper and salt. In large sauté pan, sear both sides of chops until brown. Add onion and cook for 2 minutes until soft. Add by leaf, a pinch of chili powder and remaining ingredients except green pepper. Simmer for approximately 30 minutes or until rice is almost cooked. Add diced green pepper for remaining 10 minutes
