Ingredients
  • 4 pork chops (doesn’t matter what kind – bone in or out, thin or thick cut)
  • 1 tsp. rosemary
  • ½ tsp. black pepper
  • ½ tsp. salt
  • 1 bay leaf
  • chili powder (to taste)
  • 1 medium onion, chopped
  • 1 can stewed tomatoes
  • 1 can or ½ jar salsa (mild, medium or hot - your preference!)
  • 2 c. water
  • 1 c. rice
  • 1 green pepper, diced

Directions
  1. Cover both sides of pork chops with rosemary, black pepper and salt. In large sauté pan, sear both sides of chops until brown. Add onion and cook for 2 minutes until soft. Add by leaf, a pinch of chili powder and remaining ingredients except green pepper. Simmer for approximately 30 minutes or until rice is almost cooked. Add diced green pepper for remaining 10 minutes
