How to make it

  • PREPARE pasta according to package directions. Drain under cold running water.
  • Place peanut butter, soy sauce, water, ginger, vinegar, sweet chili sauce, honey and garlic in blender; cover. Blend until smooth. Transfer to large serving bowl. Refrigerate.
  • ADD pasta, bell peppers, snow peas, carrot, green onions and sesame seeds to dressing; toss to combine.
  • Garnish with chopped peanuts.

    This is delicious! I adapted for a hot lunch, with spaghetti as the pasta and carrots as the only veg, and sauteed the ginger, onion and sesame seeds, then mixed them with the other sauce ingredients (instead of using a blender). I also used sriracha sauce as my chili sauce. Definitely will add it to my go-to list of pasta recipes.
