Italian Sausage and Tortellini Soup

- 1 lb. italian sausage, out of casing shopping list
- 1 cup chopped onion shopping list
- 2 garlic cloves, sliced thin shopping list
- 5 cups beef stock shopping list
- 2 cups chopped tomatoes (I use Romas) shopping list
- 1 - 8 oz. can tomato sauce shopping list
- 1 lb. cheese tortellini shopping list
- 1 large zucchini, cubed shopping list
- 1 large carrot, sliced shopping list
- 1 green pepper, diced shopping list
- 1/2 cup dry red wine shopping list
- 2 tbsp. basil shopping list
- 2 tbsp. oregano shopping list
- fresh grated parmesan cheese shopping list
How to make it
- Saute sausage in large stock pot over med-hi heat until cooked through, crumbling while cooking. Remove from pot and set aside.
- Drain most of the grease, add onion and garlic and saute until translucent.
- Return sausage to pot. Add all remaining ingredients EXCEPT tortellini and cheese.
- Simmer about 40 minutes.
- Add tortellini and cook until tender. Season to taste with salt and pepper.
- Ladle servings into bowls and sprinkle with cheese.
