Nettys Salsa Breakfast Enchiladas Recipe

For those who like salsa on their eggs

Ingredients
  • 2 whole eggs
  • grated Chedder and mozzerella
  • 2 corn tortillas
  • your favorite salsa
  • 1 oven safe plate

Directions
  1. Set broiler to low
  2. Scramble eggs then put aside
  3. warm corn tortillas
  4. put on 1 oven safe plate
  5. add half of eggs to tortilla
  6. add a little cheese then Roll
  7. repeat previouse 4 steps
  8. Top off with salsa and cheese
  9. Put in broiler till warm and cheese is melted.( you don't want the plate in the oven too long)
  10. take out carefully and serve immediatly.
  11. If you like you can make more and use a cassarole dish heat at 350 and heat till hot and melted.
