Sardines Caldeirada Recipe

Ingredients

50 medium Sardines (or other fish)

1 kg Potatoes

1 Kg Onions

1 800 gr can of peeled Tomatoes

1 branch of Parsley

1 bay leaf

1 tsp Paprika

6 tbs Olive oil

1 tsp Vinegar

Salt

Pepper

Directions

Cut the head of the sardines and clean them.

Peel the potatoes and onions and slice them.

In a pot, place alternally the onions, potatoes, tomatoes and sardines, salt and pepper.

On top place the parsley, bay leaf, paprika, olive oil and vinegar (and the remain of the tomato juice in the can).

Put the lid on.

Cook gently, shaking it time to time.

Since you describe this as a fisherman's recipe, I gather the sardines should be fresh from a fish market. Is that correct? And, having asked that question, could canned sardines be used instead?
