How to make it

  • Cut the head of the sardines and clean them.
  • Peel the potatoes and onions and slice them.
  • In a pot, place alternally the onions, potatoes, tomatoes and sardines, salt and pepper.
  • On top place the parsley, bay leaf, paprika, olive oil and vinegar (and the remain of the tomato juice in the can).
  • Put the lid on.
  • Cook gently, shaking it time to time.

    Since you describe this as a fisherman's recipe, I gather the sardines should be fresh from a fish market. Is that correct? And, having asked that question, could canned sardines be used instead?
