Mashed Potatoes With Leeks And Cream Cheese Recipe
I love these. They are so good. It is a great change because they have a mild onion flavor from the leeks, and creamy from the cream cheese,

Ingredients
  • 6 medium white potatoes, scrubbed
  • 1 large leek
  • 2 3 oz packages cream cheese
  • water
  • kosher salt to taste
  • 1 tsp white pepper

Directions
  1. chop the potatoes into chunks, place in a pot of cold water. Rinse the leeks after cutting the ends off and getting rid of the dark tops. use only the light white and light green. Run these under cold water until all dirt and grit are gone. Chop up and place in the pan with the potatoes and salt. Bring to a boil and cook over medium heat about 20 minutes until the potatoes are tender enough to mash. A fork inserted should pierce the potatoes very easily. drain the water and add the cream cheese and mash with a potato masher. We serve these as is but you can use gravy if you like or even add 1 cup of parmesan cheese.

Alterations


Sautee bacon pieces along with the leeks and add to the potato and cream cheese. Yummmm!


I sometimes make these with yukon gold or even fingerling potatoes. They are so good. Thanks anikke for your idea. I may try that but of course I would use Kansas City Bacon--oh my!

I see leeks called for in recipes all the time, but rarely buy them. This sounds like a great simple variation for an old favorite.
