How to make it

  • chop the potatoes into chunks, place in a pot of cold water. Rinse the leeks after cutting the ends off and getting rid of the dark tops. use only the light white and light green. Run these under cold water until all dirt and grit are gone. Chop up and place in the pan with the potatoes and salt. Bring to a boil and cook over medium heat about 20 minutes until the potatoes are tender enough to mash. A fork inserted should pierce the potatoes very easily. drain the water and add the cream cheese and mash with a potato masher. We serve these as is but you can use gravy if you like or even add 1 cup of parmesan cheese.
