These are delicious little corn fritters without all the batter! They are very quick and easy to make! Eat alone or dip them in any Thai or other Asian sauce you love!

Ingredients
  • 1 1/3 cups canned or frozen corn
  • 2 red Thai chilies, seeded and very finely chopped
  • 2 cloves garlic, crushed
  • 10 lime leaves, very finely chopped (or 1 tbsp. grated lime peel)
  • 2 tbsp. fresh cilantro, chopped
  • 1 large egg
  • 1/2 cup cornmeal
  • 3/4 cup fresh green beans, very finely chopped
  • peanut oil

Directions
  1. Place the corn, green beans, chilies, garlic, lime, cilantro, egg and cornmeal in a large mixing bowl and stir to combine.
  2. Divide the cornmeal mixture into small balls. Flatten the balls of mixture between the palms of your hands to form rounds.
  3. Heat a little peanut oil in a preheated wok or non-stick skillet.
  4. Fry the fritters in batches until brown and crispy on the outside, turning occasionally.
  5. Serve immediately.
