How to make it

  • Place the corn, green beans, chilies, garlic, lime, cilantro, egg and cornmeal in a large mixing bowl and stir to combine.
  • Divide the cornmeal mixture into small balls. Flatten the balls of mixture between the palms of your hands to form rounds.
  • Heat a little peanut oil in a preheated wok or non-stick skillet.
  • Fry the fritters in batches until brown and crispy on the outside, turning occasionally.
  • Serve immediately.
