Jamaican Jerk Chicken Recipe
A hot and spicy jamaican jerk chicken.You can make the jerk sauce the night before and keep in the fridge.

Ingredients
  • 3 Habanero or Scotch bonnet peppers,stemmed and seeded(wear rubber gloves!)
  • 3 Tbsp. allspice,ground
  • 3 Tbsp.lime juice
  • 2 scallions,chopped
  • 1 tsp.cinnamon,ground
  • 1 tsp.nutmeg,ground
  • 4 boneles,skinless chicken breast halves
  • 1 Tbsp. cooking oil

Directions
  1. Puree the first six ingredients in a blender or food processor to make a thick paste.
  2. Wearing rubber gloves,rub the paste all over the chicken.
  3. Let breasts sit for 15 min.
  4. Heat oil in non-stick skillet over medium -high heat.
  5. Brown breasts on each side for 2 min.
  6. Reduce heat and cook until the juices run clear, or done,about 15 min.
