Beans and Lentils

- 1/2 c dried red kidney beans or pinto beans shopping list
- 1/2 c dried lentils shopping list
- 2 1/2 c water shopping list
- 3 tsp unsalted butter shopping list
- 1/2 c onion, minced shopping list
- 1 - 2 garlic cloves, minced or pressed shopping list
- 1 1/2 tsp fresh ginger, minced shopping list
- 2 fresh hot chili peppers, stemmed and minced shopping list
- 1/4 c unsweetened tomato paste shopping list
- 1/2 tsp ground coriander shopping list
- 1/2 tsp ground cumin shopping list
- freshly ground pepper, to taste shopping list
- 1/2 tsp salt shopping list
- 1/2 c low-fat milk shopping list
- fresh cilantro, chopped, for garnish shopping list
How to make it
- Soak beans overnight.
- Place beans, lentils, and water in a large, heavy saucepan.
- Bring to a boil.
- Reduce heat, cover, and cook until beans are tender about 1 1/2 hours
- Remove from heat.
- Heat butter in a large nonstick saucepan.
- Add onion, garlic, ginger, and chilies.
- Saute until onion is lightly browned, about 5 minutes.
- Add tomato paste, coriander, cumin, and pepper, stirrring constantly, for about 2 minutes.
- Add the cooked beans, salt, and milk.
- Bring to a boil.
- Reduce heat to low.
- Cover and cook until most of the liquid is absorbed, about 7 to 9 minutes.
- Garnish with fresh chopped cilantro.
- 255 calories per serving.
