Ingredients
  • 1/2 c dried red kidney beans or pinto beans
  • 1/2 c dried lentils
  • 2 1/2 c water
  • 3 tsp unsalted butter
  • 1/2 c onion, minced
  • 1 - 2 garlic cloves, minced or pressed
  • 1 1/2 tsp fresh ginger, minced
  • 2 fresh hot chili peppers, stemmed and minced
  • 1/4 c unsweetened tomato paste
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • freshly ground pepper, to taste
  • 1/2 tsp salt
  • 1/2 c low-fat milk
  • fresh cilantro, chopped, for garnish

Directions
  1. Soak beans overnight.
  2. Place beans, lentils, and water in a large, heavy saucepan.
  3. Bring to a boil.
  4. Reduce heat, cover, and cook until beans are tender about 1 1/2 hours
  5. Remove from heat.
  6. Heat butter in a large nonstick saucepan.
  7. Add onion, garlic, ginger, and chilies.
  8. Saute until onion is lightly browned, about 5 minutes.
  9. Add tomato paste, coriander, cumin, and pepper, stirrring constantly, for about 2 minutes.
  10. Add the cooked beans, salt, and milk.
  11. Bring to a boil.
  12. Reduce heat to low.
  13. Cover and cook until most of the liquid is absorbed, about 7 to 9 minutes.
  14. Garnish with fresh chopped cilantro.
  15. 255 calories per serving.
