How to make it

  • In a large bowl combine sugar and flour and cut in butter as if you are make pie pastry with pastry blended until fine crumbs result .
  • Press mixture into a 9 x 13 oblong pan or divide and press crumbs into 2 biscuit pans.
  • Bake 350F about 10 minutes or until crust appears set.
  • Meanwhile with electric mixer beat egg and sugar until thick and pale.
  • Add lemon juice, rind, flour and baking powder and blend well.
  • Pour lemon mixture over the crust and bake about 20 minutes more or until top is set and pale golden.
  • Overbaking will cause top to crack.
  • Remove from oven and cool completely.
  • Once cool ( chilling helps cutting ) cut into desired size pieces.
  • Dust with powdered sugar if desired.
  • Yield: 1 large pan or 2 small pans.
  • Amount depends on large or small one cuts the pieces.
