Luscious Lemon squares

- Base: shopping list
- 4 sticks cold butter or margarine shopping list
- 4 cups flour shopping list
- 1 1/2 cups powdered sugar shopping list
- Filling: shopping list
- 4 large lemons- grate all rind and juice shopping list
- 5 large eggs shopping list
- 2 cups sugar shopping list
- 2 tsp baking powder shopping list
- 1/2 cup flour shopping list
How to make it
- In a large bowl combine sugar and flour and cut in butter as if you are make pie pastry with pastry blended until fine crumbs result .
- Press mixture into a 9 x 13 oblong pan or divide and press crumbs into 2 biscuit pans.
- Bake 350F about 10 minutes or until crust appears set.
- Meanwhile with electric mixer beat egg and sugar until thick and pale.
- Add lemon juice, rind, flour and baking powder and blend well.
- Pour lemon mixture over the crust and bake about 20 minutes more or until top is set and pale golden.
- Overbaking will cause top to crack.
- Remove from oven and cool completely.
- Once cool ( chilling helps cutting ) cut into desired size pieces.
- Dust with powdered sugar if desired.
- Yield: 1 large pan or 2 small pans.
- Amount depends on large or small one cuts the pieces.
