White Chili

- 1-2 lb. chicken breasts, cubed shopping list
- 4 tbsp olive oil shopping list
- 1 lg onion, chopped shopping list
- 5 ribs celery, chopped shopping list
- 2 tbsp. garlic, chopped shopping list
- 3 cans chicken broth (regular sized cans) shopping list
- 5 cans great northern beans (you will use 3 cans as is, and mash the other 2 cans) shopping list
- 2 (4.5oz) chopped green chilies shopping list
- 1/2 tsp celery salt (I usually add more) shopping list
- 1 tsp oregano shopping list
- 1 tsp cumin shopping list
- 1/2 tsp chili powder shopping list
- 1/2 tsp pepper shopping list
- 1/2 tsp red pepper flakes (or more if you want it spicier) shopping list
- 1 tsp sale shopping list
- 1 pkg country gravy mix (the secret ingredient) shopping list
- shredded mozzarella cheese shopping list
How to make it
- brown cubed chicken breasts in 2 tsp olive oil
- add chopped onion, celery, garlic and 2 more tsp. olive oil
- cook until onion is transparent
- add 3 cans chicken broth
- add 3 cans great northern beans
- mash 2 remaining cans of beans, with liquid, and add
- add green chilies, celery salt, oregano, cumin, chili powder, pepper, red pepper flakes, salt and country gravy mix.
- stir, stir, stir
- bring to boil and simmer for one hour
- serve with shredded mozzarella cheese
