Ingredients
  • 6 potatoes
  • 1 yellow onion chopped
  • 1/4 cup butter
  • 1 tablespoon flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 2 cups cheddar cheese shredded
  • 1/4 cup bread crumbs

Directions
  1. Peel and slice potatoes in thin cuts.
  2. Cook and stir onion in butter until onion is tender then stir in flour, salt and pepper.
  3. Cook over low heat stirring constantly until mixture is bubbly then remove from heat.
  4. Stir in milk and 1-1/2 cups of the cheese then heat to boiling stirring constantly.
  5. Boil and stir 1 minute then place potatoes in casserole dish.
  6. Pour cheese sauce over potatoes then cook uncovered for 1 hour at 375.
  7. Mix remaining cheese and bread crumbs then sprinkle over potatoes.
  8. Cook uncovered until top is brown and bubbly about 20 minutes.
