Ingredients
  • 4 medium sweet potatoes
  • 1/2 cup sour cream
  • 2 tablespoons pure maple syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground ginger
  • 1/4 cup chopped pecans toasted

Directions
  1. Pierce sweet potatoes several times with a fork then place on a baking sheet.
  2. Bake at 375 for 1 hour.
  3. Stir together sour cream and next 3 ingredients.
  4. Spoon over split baked potatoes and sprinkle with pecans.
