How to make it

  • Break up the matzoh by hand in a bowl.
  • Cover with hot liquid of choice and let set 5 minutes.
  • Use your fingers to distrubute liquid.
  • Marzoh should be very soft.
  • Add the egg, pesto mixture, salt and pepper, perhaps more garlic if you desire etc.
  • Mix very well
  • In a 10 inch heavy duty skillet, heat some oil, or butter or combinations of both.
  • Pour in the matzoh mixture.
  • Spread with back of large spoon to fill pan evenly.
  • Cook either two ways as you prefer.
  • Let crisp a bit on bottom and scamble till cooked and browned
  • Or
  • Let bottom cook till brown and crisp and carefully use wide spatula to fllip over as one hugh matzah pancake.
  • Let finish browning on second side
  • Serve immediately
