Always using new ideas to make something different and delicious! I used my Prima Donna Pesto Sauce ( already posted ) to make this dish.

Ingredients
  • 4 large sheets of matzoh
  • 1/2 cup warm liquid or enough : water, mushroom broth, chicken broth, milk to soften
  • 3 large eggs
  • 2 heaping Tbs thick pesto sauce
  • salt and pepper to taste
  • olive oi and butter to fry

Directions
  1. Break up the matzoh by hand in a bowl.
  2. Cover with hot liquid of choice and let set 5 minutes.
  3. Use your fingers to distrubute liquid.
  4. Marzoh should be very soft.
  5. Add the egg, pesto mixture, salt and pepper, perhaps more garlic if you desire etc.
  6. Mix very well
  7. In a 10 inch heavy duty skillet, heat some oil, or butter or combinations of both.
  8. Pour in the matzoh mixture.
  9. Spread with back of large spoon to fill pan evenly.
  10. Cook either two ways as you prefer.
  11. Let crisp a bit on bottom and scamble till cooked and browned
  12. Or
  13. Let bottom cook till brown and crisp and carefully use wide spatula to fllip over as one hugh matzah pancake.
  14. Let finish browning on second side
  15. Serve immediately
