Not Your Average Matzoh Brie

- 4 large sheets of matzoh shopping list
- 1/2 cup warm liquid or enough : water, mushroom broth, chicken broth, milk to soften shopping list
- 3 large eggs shopping list
- 2 heaping Tbs thick pesto sauce shopping list
- salt and pepper to taste shopping list
- olive oi and butter to fry shopping list
How to make it
- Break up the matzoh by hand in a bowl.
- Cover with hot liquid of choice and let set 5 minutes.
- Use your fingers to distrubute liquid.
- Marzoh should be very soft.
- Add the egg, pesto mixture, salt and pepper, perhaps more garlic if you desire etc.
- Mix very well
- In a 10 inch heavy duty skillet, heat some oil, or butter or combinations of both.
- Pour in the matzoh mixture.
- Spread with back of large spoon to fill pan evenly.
- Cook either two ways as you prefer.
- Let crisp a bit on bottom and scamble till cooked and browned
- Or
- Let bottom cook till brown and crisp and carefully use wide spatula to fllip over as one hugh matzah pancake.
- Let finish browning on second side
- Serve immediately
