Easy and healthy chile recipe

Ingredients
  • Olive oil
  • 2 lbs ground turkey or chicken
  • 2 cans any beans drained and rinsed
  • 3 cans (~15oz each) tomato puree
  • 4 fresh tomatoes diced for garnish
  • cilantro for garnish
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 2 poblano peppers minced
  • optional peppers of choice, more the merrier
  • 2 medium onions diced
  • 1 tsp garlic crushed or minced
  • 1 Tablespoon chile powder
  • 1 Tablespoon ground cumin
  • 1 Tablespoon cocoa powder
  • 2 Tablespoons balsamic vinegar
  • bottled hot sauce to taste

Directions
  1. Heat large pot add oil
  2. fry peppers and onions for a few minute until onions start to clear
  3. add meat and cook through, about 5 mts
  4. add garlic, chile powder, cumin and cocoa powder
  5. stir for about a minute
  6. add tomato puree and vinegar (hot sauce to liking)
  7. bring to boil then cover and simmer for about 1/2 hour stirring occasionally
  8. add beans and let heat through for about 5 mts
  9. serve in bowls
  10. garnish with chopped fresh tomato and cilantro
