Savory Potato Waffles

- 1 white onion peeled and chopped shopping list
- 6 parsley sprigs chopped shopping list
- 8 potatoes peeled and shredded shopping list
- 1 lemon juiced shopping list
- 4 egg yolks beaten shopping list
- 2/3 cup flour shopping list
- 2 tablespoons olive oil shopping list
- 4 teaspoons baking powder shopping list
- 1/2 teaspoon cinnamon shopping list
- 1/8 teaspoon salt shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 4 egg whites beaten until soft peaks form shopping list
How to make it
- Put onion, parsley and potatoes into a large strainer or colander.
- Squeeze liquid from mixture using your hands then transfer mixture to a bowl.
- Add lemon juice and mix with a fork.
- Add egg yolks, oil, flour, baking powder, cinnamon, salt and pepper stirring to blend.
- Quickly fold in egg whites.
- Heat waffle iron and spread mixture evenly on iron and cook 10 minutes until golden. Serve waffles with sour cream and applesauce.
