How to make it

  • Put onion, parsley and potatoes into a large strainer or colander.
  • Squeeze liquid from mixture using your hands then transfer mixture to a bowl.
  • Add lemon juice and mix with a fork.
  • Add egg yolks, oil, flour, baking powder, cinnamon, salt and pepper stirring to blend.
  • Quickly fold in egg whites.
  • Heat waffle iron and spread mixture evenly on iron and cook 10 minutes until golden. Serve waffles with sour cream and applesauce.
