SALT AND PEPPER SQUID Recipe
This is one of my husbands specialties, he makes the best calamari I have ever tasted. This dish is popular in Australia.

Ingredients
  • 1/2c plain flour
  • 1/2tsp baking soda
  • 2tsp salt
  • 2tsp chilli flakes
  • 2tsp black pepper
  • 1c milk
  • 1Kg medium calamari

Directions
  1. Clean calamari and remove skin from the tentacles and hoods. Make a cut in each hood, open out flat and score in a diamond pattern. Cut the tentacles in half through the center.
  2. Sift the flour, baking soda and salt into a medium bowl. Add the chilli flakes and pepper and stir to combine.
  3. Place the milk in a shallow bowl. Dip the prepared calamari into the milk then into the flour mixture. Shake off excess flour.
  4. Deepfry in batches until golden brown and crispy.
  5. Serve immediately.
