SALT AND PEPPER SQUID

- 1/2c plain flour shopping list
- 1/2tsp baking soda shopping list
- 2tsp salt shopping list
- 2tsp chilli flakes shopping list
- 2tsp black pepper shopping list
- 1c milk shopping list
- 1Kg medium calamari shopping list
How to make it
- Clean calamari and remove skin from the tentacles and hoods. Make a cut in each hood, open out flat and score in a diamond pattern. Cut the tentacles in half through the center.
- Sift the flour, baking soda and salt into a medium bowl. Add the chilli flakes and pepper and stir to combine.
- Place the milk in a shallow bowl. Dip the prepared calamari into the milk then into the flour mixture. Shake off excess flour.
- Deepfry in batches until golden brown and crispy.
- Serve immediately.
