How to make it

  • Bring water and sugar to a boil and boil 5 minutes till syrupy.
  • Remove from heat and cool about 10 to 15 minutes.
  • Stir in coconut and vanilla.
  • Cool completely.
  • Whip cream to soft peaks and fold into the mixture.
  • Divide mixture into dessert dishes.
  • Freeze one hour or more if needed
  • Before serving, remove from freezer and sprinkle with some of the almonds and coconut
