Chicken With Rhubarb Sauce Recipe
What's nice about the recipe you can prepare chicken anyway you like- even roasted or fried and serve with the rhubarb sauce

Ingredients
  • 1/2 pound rhubarb stems chopped
  • 1/2 cup cold water
  • 1/2 cup honey
  • 3 Tbs dry vermouth
  • 3 Tbs fresh lime juice
  • 2 Tbs cornstarch
  • 4 whole boneless chicken breasts which have been poached or sautéed to one's liking- or prepared fried, roasted etc.
  • Fresh mint leaves to garnish

Directions
  1. Bring rhubarb, water and honey to a simmer in saucepan.
  2. Combine vermouth, lime juice and cornstarch to dissolve cornstarch.
  3. Add to rhubarb mixture and cook and whisk until sauce is thickened and translucent.
  4. Serve sauce over the chicken.
  5. Garnish with a chiffonade of fresh mint
