Brown Sugar  Rhubarb Muffins Recipe
Another way I enjoy using rhubarb in a tasty muffin recipe- could also be made in loaf form if you desire-but increase baking time.

Ingredients
  • 2 cups flour
  • 1 tbs baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup brown sugar
  • 3 Tbs strawberry jam, not jelly
  • 3/4 cup milk
  • 2 tbs butter or margarine melted
  • 2 tsp vanilla
  • 1 1/2 cups fresh diced rhubarb

Directions
  1. Combine all dry ingredients except the brown sugar.
  2. Whisk together brown sugar, egg and jam.
  3. Then whisk in butter and milk and vanilla.
  4. Stir in rhubarb.
  5. Pour mixture over dry ingredients and mix just to moisten
  6. ingredients.
  7. Place in muffin cups about 2/3 full.
  8. Bake at 400 degrees until lightly browned and tested done, about 20 to 25 minutes.
  9. Makes about 18 muffins.

The jam is a nice addition - I will have to try this...imagine the strawberry flavor sweetens up the rhubarb nicely. Great idea!
