Ingredients
  • 14 ounces of tuna steaks
  • 16 small button mushrooms
  • Marinade:
  • 3 garlic cloves, crushed
  • 3 T olive oil
  • Grated rind and juice of 1 lemon
  • Grated rind and juice of 1 orange
  • 1 T chopped fresh thyme or 1 tsp dried thyme
  • Salt and freshly ground black pepper

Directions
  1. Wash and pat dry the tuna steaks.
  2. Cut the tuna into 3/4 inch cubes and put the cubes in a non-metallic bowl.
  3. Clean and wipe dry the mushrooms and add them to the bowl.
  4. Combine the ingredients for the marinade and pour over the tuna and mushrooms.
  5. Make sure the tuna and mushrooms are evenly coated with the marinade.
  6. Cover and leave to marinate for 30 minutes to an hour in the fridge.
  7. Halfway through, toss the tuna and mushrooms again.
  8. Thread the cubes of tuna and mushrooms on to the skewers.
  9. Preheat the grill to high and oil the grill rack.
  10. Brush the kebabs with the marinade.
  11. Grill for 2-4 minutes on each side, brushing them with more marinade when you turn the kebabs.
  12. Serve immediately.
